Classic Vanilla Caramel Squares (yields ~192)
Ingredients:
- 1 cup granulated sugar
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1/2 cup light corn syrup
- 1 tsp vanilla extract
- 1/2 tsp sea salt
Steps:
- 1. Combine sugar, cream, butter, and corn syrup in a heavy saucepan.
- 2. Bring to 245°F (118°C) on a candy thermometer, stirring constantly.
- 3. Off heat, stir in vanilla and salt.
- 4. Pour quickly into the 192 cavities. Let cool at room temperature for 1 hour.
- 5. Pop out the squares and wrap individually in wax paper.
